After 15 days the wine is racked to large oak botti (30-60 hl) for 14 months
Each variety is fermented separately in small tanks using natural yeasts at 28-30° C
The remainder has been wild fermented in stainless steel with 5g/l residual sugar to round off the spice a little
all crafted in the Zorgvliet cellar
these are 70 year old bush vines but classified as 40 y/o (because at this time
the rest are situated on the gravel soils of Saint Sulpice
