Gyuto 245mm Ebonised oakThis Gyuto (Japanese chef knife) feature a flat heel, slight belly, workhorse blade with a good distal taper and nimble tip. Shop made san ma with 115CrV3 steel core and soft steel cladding (trash knife). Forged to shape and to geometry the bevels are ground on water cooled grinding stone with a satin finish (Trizact 400). The handle is made with charred Oak. It's the first of the trash knives project, however they don't have the touch mark (because
